Moisture & Broken grains.

Buyers commonly specify moisture under 14% - wetter grain risks spoilage in storage. Broken-grain percentage decides cooking uniformity and fair price: ask for the spec, then verify it against the sample in hand.

Aging proof & Licence.

"Aged rice" is a claim - ask for the crop year and storage records behind it. And every legitimate rice supplier in India holds an FSSAI licence: ask for the number and match it to the invoice.

Dispatch.

Volume means nothing if it can't move. Confirm packing options, dispatch time to your market, and whether the supplier can hold quantity consistent across repeat orders. Then cook a sample batch before confirming the first lot.
